Inovasi Penyimpanan Produk Bawnag Merah

Bawang merah merupakan komoditas strategis yang ketersediaan dan harganya sangat berpengaruh terhadap psikologis masyarakat. Padahal bawang merah bukan merupakan makanan pokok melainkan bumbu masak sehingga kebutuhan dalam konsumsi makanan sehari hari tidak besar seperti halnya beras. Namun, pasokannya snagt berpengaruh terhadap stabilitas harga di pasaran bahkan berpengaruh terhadap inflasi. Oleh karena itu , stabilitas pasokan bawang merah sepanjang tahun khususnya pada saat menjelang bulan suci ramadhan dan idul fitri menjadi faktor penting

Agar pasokan bawang merah dapat stabil  maka dilakukan pengembangan penanganan serta pengolahan hasil pertanian untuk memecahkan beberapa masalah stabilitas pasokan bawang merah, salah satu masalh yang dihadapi komoditas bawang merah adalah pada penangan pasca panen atau lebih tepatnya pada proses penyimpanan produk. Salah satu inovasi dalam penyimpanan bawang merah yaitu Inovasi in store drying, sebuah teknologi yang membuat bawang merah dapat tahan hingga 6 bulan penyimpanan tanpa penurunan kualitas yang berarti. Saat ini inovasi tersebut telah diadopsi dibeberapa sentra produksi bawang merah seperti Brebes, Tegal, Palangkaraya, dan beberapa daerah lainnya. Inovasi lainnya yaitu inovasi produk bawang minimal proses, dimaksudkan untuk menyediakan produk segar, bawang iris dan pasta bawnag yang diawetkan menggunkan larutan garam dan asam serta dikemas dalam kemasan steril sehingga umur simpannya bisa hingga satu tahun.

Dengan adanya inovasi dalam penyimpanan bawang merah, baik menggunakan in store drying maupun produk bawnag merah minimal proses  diharapkan stabilitas bawang merah menjadi stabil dan produk bawang merah yang tersedia  di pasar tetap segar walupun telah disimpan dalam waktu lama.

Even thought onion is not staple food but seasoning, so that necessity in daily food consumption is not great just like rice. But, the supply is very influent on price stability in the market and even affects the inflation. Therefore, supply stability on onion throughout the year specific on Ramadan also Idul fitri is an important factor.

In order to stable onion, then development of handling and processing of agricultural product has to do for solving some problem of stability of onion supply. One of the problems facing commodity onion is on post-harvest handling, or more precisely in the process of product storage. One of the innovations in the storage of onions is Innovation in store drying, a technology that makes the red onion can hold up to 6 months of storage without significant loss of quality. Currently these innovations have been adopted in several production centers onion like Brebes, Tegal, Palangkaraya, and some other areas. Other innovations are minimal onion product innovation process, intended to provide fresh produce, onion slices and onion pasta are preserved using the saline solution and acid and packed in sterile packaging so that the shelf life can be up to one year.

With innovations in storage onion, using either in-store or product drying process a minimum of red onion, red onion stability is expected to be stable and onion products available in the market remains fresh even though has been stored for long periods.
